The Greek feta in a skillet with vegetables is a very quick and tasty vegetarian main course.

  • 10.5 oz feta
  • Half onion
  • 1 clove garlic
  • 1 stalk celery
  • 2 zucchini
  • 2 carrots
  • 1 round eggplant
  • 2 pinches salt
  • 2 teaspoons dried oregano
  • 2 tablespoons extra virgin olive oil

Preparation of Greek feta in a skillet

  • Prepare the Greek feta in a skillet by trimming the vegetables, then peel the onion and carrots.

  • Slice the onion, and cut the carrots and zucchini into rounds.

    Slice the celery after removing the tough strings with the help of a potato peeler.

  • Cut the eggplant first into 0.4-inch slices and then into pieces.

  • In a high-sided skillet, heat the extra virgin olive oil with the garlic clove in its skin.

    As soon as it starts to sizzle, remove the garlic and first add the celery and carrots, let them stew for a few minutes, then incorporate the rest of the vegetables.

  • Let cook until the vegetables are soft, shaking and tossing the skillet occasionally.

  • Salt the vegetables, add the feta cheese on top of the cooked vegetables, lower the heat, and cover with the lid.

  • This way the cheese softens and warms up, sprinkle with dried oregano and, if you like, a pinch of black pepper.
