Ingredients to prepare Genoese Style Green Beans

  • 28 oz green beans
  • 2 cloves garlic
  • 3 tbsps extra virgin olive oil
  • 2 tbsps chopped parsley (fresh)
  • 4 salted anchovies
  • 2 pinches salt
  • to taste black pepper
  • to taste mint (fresh)

Preparation of Genoese Style Green Beans

  • Preparing Genoese Style Green Beans is very simple. You can choose to either steam them or simply boil them.

  • Wash and trim the green beans, and in the meantime, if you want to boil them, bring a pot of plenty of unsalted water to a boil.

    If you prefer to steam them, there are 2 alternatives: a steaming basket inside a large pot with 2 inches of water or in the microwave where you can place the green beans with 2 tablespoons of water.

  • In the case of steaming in the microwave, after placing the green beans in a glass dish, add 2 tablespoons of water and cover the bowl with plastic wrap.

    Place it in the microwave and set it to the highest power for 2 minutes, let the green beans rest for 5 minutes before removing the plastic wrap.

  • In any case, cook them in boiling water for 8 minutes, no more, otherwise they’ll be too soft; drain them and set aside for a moment.

  • Finely chop the garlic cloves together with the parsley.

    In a large skillet, heat the extra virgin olive oil and dissolve the well-desalted and chopped anchovies.

  • Then add the parsley and garlic mixture and let it cook for a few minutes, making sure it doesn’t color.

  • Add the cooked green beans, salt, and pepper, and by either tossing the skillet or turning everything with a spatula, flavor the Genoese style green beans for another 4 or 5 minutes.

  • Sprinkle with fresh mint before serving the Genoese style green beans at the table while still hot.
