Green Beans with Sweet and Sour Onions

The Green Beans with Sweet and Sour Onions is a tasty and simple side dish that you can prepare with either fresh green beans or convenient frozen ones when you’re short on time.

We always steam the Green Beans to retain their bright green color and prevent them from absorbing water, but if you don’t have a steamer, you can boil them for about 8 minutes and they will be perfect.

Then just slice the onions, cook them in a pan with sugar and vinegar, and voilà, your side dish is ready.

Ingredients for Green Beans with Sweet and Sour Onions

  • 1.1 lbs green beans (fresh or frozen)
  • 2 onions (medium-large)
  • 2.1 tbsp brown sugar
  • 2.7 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 2 pinches salt
  • to taste black olives (or Taggiasca olives)

How to Prepare Green Beans with Sweet and Sour Onions

  • First, peel and slice the onions not too thick nor too thin.

    Set aside.

  • If using fresh green beans, wash and trim them, cook them in boiling water without salt for 8 minutes from boiling point, then drain.

    You can steam them in a regular pot with an inch of water by placing a steamer or pasta cooking basket on top, then add the green beans, cover with the lid, and cook for 5 minutes.

  • Heat the extra virgin olive oil in a wide pan with high edges and sauté the onions until they become transparent.

    Sprinkle the onions with brown sugar, stir to dissolve, then deglaze with apple cider vinegar.

  • At this point, the green beans will be cooked, drain them and add them to the pan with the onions, salt, and mix very well to flavor.

  • Add the olives cut in half and continue cooking for another 3 to 4 minutes.

  • The Green Beans with Sweet and Sour Onions are ready; you can enjoy them hot just made or at room temperature. The next day they will be even more flavorful.

Storage Advice and Variations

They can be stored in the fridge well sealed in an airtight container for 3 days.

You can use fresh green beans or those frozen to be cooked still frozen.

To add a crunchy note, you can add some toasted pine nuts.

You can skip the olives or replace them with Taggiasca or green olives.
