Ingredients for the Green Potatoes Sardinian Recipe
- 28 oz potatoes
- 2 cloves garlic
- 1 bunch parsley
- 4 tbsps extra virgin olive oil
- 3 pinches salt
How to Prepare Green Potatoes
Preparing the green potatoes is simple and quick. First, peel and wash the potatoes thoroughly under cold running water.
Dry them very well and cut them into pieces not too large.
In a large pan, sauté the minced garlic cloves with parsley and extra virgin olive oil for 1 minute, just enough to warm it.
Add the potatoes, stir quickly to flavor them and incorporate just under 1 glass of water.
The water should not cover the potatoes but just touch them. At this point, lower the heat, cover with a lid, and let them cook.
The whole process will take about 15 minutes, but halfway through cooking, remove the lid, stir, and check that the bottom is still covered with water. You will see it become creamy.
When the potatoes are very tender but still intact, and the cooking liquid has turned into a white cream, you can season with salt, stir, and turn off the heat.
You can serve the green potatoes either hot or just warm.
