- 3 fennel bulbs (medium-large)
- 6 fillets salted anchovies
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- 1 bunch chopped parsley

Preparation of Grilled Fennel with Anchovy Sauce
Clean the fennel by removing the tougher outer leaves, fronds, and the base of the core.
If the fennel bulbs are large, slice them into thin pieces, otherwise, if they are smaller, you can cut them thicker.
Grill them for 4 or 5 minutes on each side on a cast iron plate, or if you have a double-sided electric grill, they will be ready in 5 minutes as they will cook on both sides at the same time.
Once ready, arrange them on a serving plate.
Meanwhile, desalt the anchovies under running water, remove the head and tail fin, then open them and remove the bone.
Crush the garlic cloves using the garlic press.
In a small pan, heat the extra virgin olive oil, add the anchovy fillets and let them dissolve by stirring with a wooden spoon.
Add the garlic and let it go for a few more minutes to flavor. We didn’t add salt, but you can add it directly to the grilled fennel if you wish.
Drizzle the grilled fennel with the anchovy sauce, using also the remaining oil in the pan, sprinkle with fresh chopped parsley, and if desired, some fennel fronds.

Want to make them more appetizing? Add a few whole anchovy fillets.
If you don’t like tasting garlic bits, you can add it whole and crushed in the pan, then remove it once the oil is flavored.
