Grilled Radicchio Side Dish

The grilled radicchio is a delicious and very easy seasonal side dish to make. If you have the opportunity to get late-harvest radicchio from Treviso directly at the market or from a local producer, you will notice the difference, not only in freshness but also in flavor. This side dish will be truly delicious and can be enriched with cheese by letting it melt over the radicchio just before removing it from the grill or by adding slices of cooked ham along with cheese for a complete and mouth-watering side dish.

A beloved and versatile vegetable, flavorful, light, and very quick to prepare, radicchio is perfect even at room temperature to accompany, for example, cutlets.

We used late-harvest radicchio from Treviso simply seasoned with extra virgin olive oil and parsley, but if you want, you can further enrich it with chopped nuts.

What you need for grilled radicchio

  • 4 heads Treviso red radicchio PGI, late-harvest
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon parsley
  • 2 pinches salt
  • 3 pinches black pepper

How to prepare grilled radicchio

  • Preparing radicchio is easy and quick. First, wash the radicchio very well, remove the tougher or damaged outer leaves, and cut the root in half. Then, with your hands, split each head in half.

  • By doing this instead of cutting the whole head with a knife, you will have all the leaves attached at the base.

    If the heads are too large, you can cut them into quarters by always cutting the root and splitting with your hands.

  • Season each head with extra virgin olive oil, letting it get between the leaves, and sprinkle with salt and pepper.

  • Heat a cast iron grill or a heavy-bottomed pan very well, and when it’s hot, place the radicchio cut-side down.

  • Always on very high heat, let it roast for at least 5 minutes, then use kitchen tongs to turn the radicchio and cook the other side until well browned and soft.

  • Once cooking is complete, place the radicchio on a serving platter, sprinkle with chopped fresh parsley, and serve very hot.

How to store grilled radicchio

Radicchio can be stored in the refrigerator in an airtight container for 2 days.

Variations
