Ingredients for the hot chocolate mix
- 3.5 oz dark chocolate
- 2 tbsp sugar
- 2 tbsp cornstarch
- 1 tsp ground cinnamon (optional)
- 2 tsp instant coffee (optional)
- 1 oz unsweetened cocoa powder
- 2 tbsp cornstarch (maizena)
- 2 tbsp granulated sugar

How to Make the Hot Chocolate Mix
The hot chocolate mix is really easy and quick to make.
First, get some perfectly clean and dry jars and a blender or food processor with stainless steel blades.
Then cut the dark chocolate into pieces as small as you can and put it in the glass of your food processor or mixer along with the cornstarch.
For hot chocolate with unsweetened cocoa, there’s no need to blend anything, just mix the unsweetened cocoa with the cornstarch and sugar, and voilà.
Use the blender in pulses to prevent the heat from the steel blades from melting the chocolate.
Shake the container several times so the chocolate pieces fall down and the powder rises up.
Once all the chocolate is powdered, transfer it to a bowl.
Add the sugar and cinnamon if you want to flavor the hot chocolate mix, otherwise, you can omit the cinnamon.
If you want, you can flavor the hot chocolate with coffee, so omit the cinnamon and add 2 teaspoons of instant coffee.
Mix everything very well with a hand whisk to dissolve any lumps.
The hot chocolate mix is ready; store it in glass jars with airtight lids in the pantry, away from light and moisture.

To prepare a cup of hot chocolate, just pour 1 cup (8 oz) of milk (the one you usually use) with 4 tablespoons of mix (about 1.5 oz), stir very well to dissolve the lumps, and bring to the stove.
Stir to prevent it from sticking to the bottom of the saucepan, and you’ll see it gradually starts to thicken.
If you want nice thick hot chocolate, add another tablespoon, and it will be as thick as a pudding.
To prepare hot chocolate in the microwave, just mix 3/4 cup (6.8 oz) of milk with 3 or 4 tablespoons of mix, dissolve the powders well.
Place the mug in the microwave, set it to the highest power (800w), and let it run for 1 minute, take it out, stir, and let it run for another 30 seconds, depending on how thick you want it.
Variations
You can replace cinnamon with grated ginger, enjoy hot chocolate with a dollop of whipped cream, or with some marshmallows.
