  • Microwave eggplants are very simple and quick to make; all you need is a basic microwave.

  • Wash the eggplants, dry them, and leave the stem attached. Then, use a toothpick to poke a couple of holes in each eggplant.

  • Place them on the microwave turntable, brush with a tiny amount of extra virgin olive oil, and set the temperature to 700w.

  • Cook the eggplants for 15 minutes (for 4 eggplants weighing 9 oz each); if they are larger, it will take a few more minutes.

    If they are smaller or fewer than 4, it may take 5 minutes less.

  • After 15 minutes, let the eggplants rest inside the switched-off microwave for at least 5-6 minutes.

You can skip brushing the eggplants with oil.
