Ingredients for ladyfinger roll with custard
- as needed ladyfingers
- 3 espresso cups coffee
- 3 egg yolks
- 1.41 oz cornstarch
- 4.23 oz sugar
- 2 cups milk
- as needed unsweetened cocoa powder (for dusting)

Preparation of ladyfinger roll with custard
To prepare the ladyfinger roll with custard, first make the coffee and let it cool.
In a microwave-safe bowl, whisk together the egg yolks and milk.
Add the cornstarch and sugar, and stir for a few moments to dissolve them.
Cook the custard in the microwave at maximum power (I use 800 W) for 3 and a half minutes, opening the door and stirring with the whisk after 2 minutes.
If your microwave has lower power, adjust the cooking time by adding 30 seconds at a time to avoid over-thickening.
While waiting for the custard to cool, take a sheet of parchment paper, dip the ladyfingers in the now cold coffee, and form a rectangle of two rows by 4 rows of ladyfingers.
When the custard is well chilled, pour it over the ladyfingers and spread it with the help of a rubber spatula.
Then close the roll using the parchment paper underneath.
The ladyfinger roll is ready to be placed in the refrigerator for at least 2 hours or in the freezer (if you want to store it for a long time).
Before serving, take it out of the fridge or freezer, remove the parchment paper and place it on a serving dish, sprinkle with unsweetened cocoa powder.
