What is needed for the lentil salad
- 5.3 oz dry lentils
- 1 cup cottage cheese
- 3 Vine tomatoes
- 1 clove garlic
- 8 leaves basil
- 3 tbsps Extra virgin olive oil
- 1 tsp Red wine vinegar
- 2 stalks Celery
- to taste Salt

How to prepare the lentil salad
To prepare the lentil salad, first rinse the lentils under cold running water and then cook them in plenty of unsalted water for the time indicated on the package.
Meanwhile, dice the tomatoes and drain the cottage cheese from its liquid in a fine-mesh strainer.
Prepare an emulsion with vinegar and oil in a salad bowl by adding the crushed or finely chopped garlic cloves, basil leaves torn by hand, and celery sliced thinly.
Season with salt and add the tomatoes.
Once the lentils are cooked, run them quickly under cold running water to stop the cooking, then drain them very well before adding them to the dressing.
Add the cottage cheese, which will have lost its liquid, and gently mix to blend all the flavors, adjust the salt if necessary and..

Variations for the lentil salad
You can season the lentil salad with a vinaigrette made with equal parts of white wine vinegar and extra virgin olive oil, chopping half an onion and the leaves of a sprig of parsley instead of using garlic and basil.
