Ingredients to prepare Light Creamy Tuna and Olive Pasta

  • 14 oz pasta (short, your preferred type)
  • 1 cup ricotta
  • 9 oz natural tuna (fillets)
  • 3.5 oz taggiasche olives
  • Half ladle Tropea red onion
  • 2 tbsps extra virgin olive oil
  • 2 pinches salt
  • to taste basil (fresh)

Preparation of Light Creamy Tuna and Olive Pasta

  • Start the light creamy tuna and olive pasta by preparing the water to cook the pasta, so place it on the flame and add a bit of salt.

  • Peel and finely chop the Tropea onion, then fry it in a pan with a little extra virgin olive oil for a few minutes.

  • When it becomes tender but not burnt, add the ricotta and let it melt, adding a few tablespoons of pasta cooking water.

  • Meanwhile, cook the pasta leaving it slightly al dente.

  • Add the shredded tuna fillets to the pan and gently mix to incorporate them with the ricotta.

  • Just add salt and incorporate the taggiasche olives.

  • Once the pasta is cooked, drain it with a slotted spoon into the pan with the sauce along with another ladle of cooking water.

  • Toss for a few seconds to mix the flavors, and before serving, sprinkle with a few torn basil leaves.
