Marinated Baked Pumpkin

Marinated Baked Pumpkin is a delicious winter side dish that is simple to prepare. The pumpkin’s marinade adds extra flavor and ensures the pumpkin stays crunchy like pumpkin chips during cooking—use chili pepper if you like, which I didn’t add because I can’t eat it. You can use chives instead of parsley or even fresh oregano if you have it available.

What you need for the marinated baked pumpkin

  • 1.3 lbs pumpkin (muscat variety or other)
  • 2 tbsps white wine vinegar
  • 4 tbsps extra virgin olive oil
  • 2 cloves garlic
  • 3 tbsps parsley
  • 3 pinches salt
  • 2 pinches black pepper
  • 1.8 oz all-purpose flour

How to prepare the marinated baked pumpkin

  • Prepare the marinated baked pumpkin by slicing the pumpkin into thin slices of 1/2 centimeter (1/4 inch).

  • In a bowl, mix olive oil, wine vinegar, salt, pepper, and whole garlic cloves without skin and add the pumpkin slices, which should remain covered by the marinade.

  • Cover with plastic wrap and marinate for at least 2 hours.

  • After the time has passed, preheat the oven to 220°C (428°F), line a baking sheet with parchment paper and sprinkle with olive oil.

  • Dry the pumpkin slices from the marinade and quickly coat them in flour, shaking off the excess, and place them on the baking sheet without overlapping.

  • Sprinkle the marinated baked pumpkin with chopped parsley and retrieve the garlic cloves from the marinade; finely chop and distribute over the pumpkin.

  • If you like, you can chop a fresh chili, oil the pumpkin slices, and bake in the middle rack of the oven.

  • Bake the marinated baked pumpkin for at least 35 minutes, checking the degree of browning because remember that every oven is different from the others.

  • If you want a more pronounced and uniform browning, turn on the grill for the last 6 minutes.

    Serve the baked pumpkin piping hot.
