- 12.3 oz all-purpose flour
- 7.1 oz Manitoba flour
- 1 1/3 cups milk
- 10 g fresh yeast
- 2 oz sugar
- 1.4 oz butter
- 2 pinches salt
- 1 egg yolk (for brushing)
- 2 tbsps milk (for brushing)

Preparation of Milk Bread Rolls for Hamburgers
To prepare the milk bread rolls for hamburgers, first dissolve the fresh yeast in room temperature milk and then sift the flours together.
Place the milk in which you dissolved the yeast in a large bowl and add the previously sifted flours, start working the dough first with a fork for a few minutes.
Once the milk and flour mixture begins to take shape, add the melted butter at room temperature, incorporate it with the fork, and add the salt.
Turn the mixture onto the work surface and knead it vigorously for at least 10 minutes then brush a bowl with oil.
Place the dough in the bowl, cover with plastic wrap, and let it rise until doubled in size.
It usually takes 5/6 hours.
Once risen, take the dough and turn it onto the work surface.
Quickly shape it into a log and cut it into 10 pieces as evenly as possible, then roll each piece into itself until you have small round rolls on top.
Place the rolls on a baking tray lined with parchment paper and let them rise until doubled.
Brush the surface with the yolk lightly beaten and mixed with milk.
Bake the milk bread rolls in the preheated oven at 375°F on the middle rack for at least 35 minutes.
Check the degree of browning, and once baked, remove from the oven, let them cool slightly, and if you want to keep them, when still warm, close them in plastic bags to maintain their moisture.
This way, they will stay soft longer, but if you want to eat them immediately, cut them once they reach room temperature and fill them as you prefer.
