Milk Cream Recipe Without Cream

The milk cream can be made with or without cream; we are on a diet so I made it with just milk. It’s a delicious cream for filling cakes, as a base for semifreddos, for filling profiteroles, but also excellent eaten on its own as in this case. I added some chopped walnuts but you can add Nutella, hazelnuts, dried or fresh fruit—feel free to create your dessert starting from the milk cream!!

Ingredients

  • 1 2/3 cups Milk (whole or skim milk)
  • 7 tbsp Sugar
  • 3 1/2 tbsp Cornstarch (maizena) (or potato starch, or flour)
  • 10 Walnut kernels

Preparation

  • 1- To prepare the milk cream, start by heating the milk in a small saucepan without letting it boil. In the meantime sift together the starch or flour with the sugar.
    Take 4 tablespoons of hot milk and mix in a bowl with the starch and sugar, removing any lumps.

  • 2- Now add the milk mixture containing the sugar into the saucepan with the hot milk, stir well with a wooden spoon and bring to a boil over very low heat.
    You must stir continuously to prevent it from sticking to the bottom of the pan and to avoid lumps—just like when making béchamel. You will see the milk cream gradually thicken. When you have reached the desired consistency, turn off the heat and let it come to room temperature.

  • 3- Once your milk cream has reached room temperature, cover it with plastic wrap directly on the surface to prevent a skin from forming and place it in the refrigerator until ready to use.
    You can serve it in glasses and mix in the chopped walnuts prepared earlier, or add the dried fruit you prefer, or eat it plain. The important thing is to refrigerate it covered with plastic wrap in contact with the surface.

  • 4- Your milk cream is ready when well chilled; it keeps in the refrigerator for 2 to 3 days or can be placed in the freezer to prepare a nice semifreddo for over a month. Have fun creating your dessert starting from this basic milk cream and..
