Ingredients

With these amounts, you will get 12 savory vegetable muffins

  • 1.5 cups all-purpose flour
  • 1 packet instant yeast for savory preparations
  • 2 eggs (large)
  • 0.5 cups milk
  • 4 tbsp sunflower seed oil
  • 2 tbsp chopped parsley
  • Half red bell pepper
  • Half yellow bell pepper
  • 2 tbsp green olives (pitted)
  • 1.75 oz Montasio (aged)
  • 2 pinches salt

How to prepare Muffins with Olives, Peppers, and Montasio

  • To prepare savory muffins with vegetables, first cut the peppers into strips and then into small cubes.

  • Cook in a pan with a whole garlic clove (which you will remove after cooking) with a little extra virgin olive oil for 8/10 minutes.

  • Grate the Montasio (or other aged cheese) with a coarse grater.

  • In a bowl, beat the eggs with a fork, add the milk and seed oil, then the grated cheese and the chopped parsley.

  • Preheat the oven to 350°F in static mode or 340°F if using a fan setting, butter, and flour 6 muffin molds.

  • Add the yeast and flour to the bowl and mix with a fork to combine.

  • Salt, and if desired, add a little ground black pepper, then add the cooked vegetables previously and the green olives cut into rings.

  • Fill the muffin molds with the mixture up to 3/4 of their capacity.

    Place in the center rack of the oven and bake the savory muffins with vegetables for .
