Ingredients for No-Bake Pesto Crackers Crostini
- 1 cup g breadsticks (also whole grain or toast)
- 6 tbsp g butter (melted)
- 2 pinches dried oregano (or thyme)
- 2 pinches salt
- 5 oz g cream cheese
- 1/3 cup g Genoese pesto (or other pesto to taste)
- 3 cherry tomatoes
- to taste olives (green, black or Taggiasca to taste)
- 5 fillets anchovies in oil

- 1 Bowl
- 1 Cookie Cutter for cookies 2 inches in diameter
Preparation of No-Bake Pesto Crackers Crostini
First, melt the butter in a bain-marie or in the microwave for a few seconds.
Then grind the breadsticks with a chopper or mixer along with the oregano and salt.
Mix with a spoon the breadstick powder with the melted butter until it is well combined.
Place a sheet of parchment paper on a cutting board or tray, using a cookie cutter of 2 inches form the base.
Place 2 tablespoons of mixture inside the cutter and press it down very well to compact.
Gently remove the cutter and form all the other bases, place in the refrigerator for at least 30 minutes to compact.
Meanwhile, with a spoon, soften the cream cheese, add the pesto, and mix well to combine.
Place the cheese cream in a piping bag with a star tip, remove the crostini from the fridge.
Make a central tuft for each cracker, decorate some with pieces of tomato, others with anchovy fillets, and others with olives.
The No-Bake Pesto Crostini are ready, keep them in the fridge until it’s time to enjoy them.
