Additionally, this oat cake with apples is lactose-free and it’s possible to substitute the sugar (even if very little) with honey or agave syrup.

Oat Cake with Apples and Walnuts without Flour

Ingredients for the Oat Cake with Apples and Walnuts

  • 1 cup fine oat flakes
  • 2 eggs
  • 1/2 cup soy milk
  • 1 apple (large)
  • 1 oz walnut kernels
  • Half packet baking powder
  • 3 tbsp granulated sugar (or brown sugar)

  • 1 Cake Pan springform, 7 inches
  • 1 Electric Whisk
  • 1 Bowl

Preparation of Oat Cake with Apples and Walnuts

  • Beat the eggs with the sugar in a large bowl until you have a white and frothy mixture.

  • Add alternately the plant-based drink to the oat flakes using a spatula. Let rest for 15 minutes so that the oat flakes absorb the liquid.

  • In the meantime, peel and core the apple, then cut half of it into small pieces and the other half into slices.

    Chop the walnuts finely, leaving some whole to decorate the cake.

  • Preheat the oven in static mode to 356°F and line a springform pan with parchment paper, 7 inches in diameter.

  • Add the apple pieces and chopped walnuts to the oat mixture, gently incorporating with the spatula, then pour the mixture into the cake pan.

    Decorate the top with some walnut kernels and the reserved apple slices and bake in the center rack of the oven.

  • Bake the apple and walnut cake without flour for 35/40 minutes, it should be lightly golden on the surface. Before removing from the oven, perform the toothpick test. Let it cool before removing it from the pan.

Storage, tips, and variations

The apple 🍎 and walnut cake without flour can be stored under a glass dome for 3 days.

You can flavor the cake with a pinch of ground cinnamon, and add some dark chocolate 🍫 shavings for a more indulgent touch.
