Of course, if you want something truly delicious, you can fry them in plenty of seed oil. You will see that they will be super crispy and golden, and thanks to the Panko, they won’t absorb oil.

Ingredients
- 2.2 lbs octopus (net of waste)
- 7 oz potatoes
- 1 tsp chopped parsley
- to taste black pepper
- 2 eggs (medium)
- to taste panko
- 7 oz mayonnaise
- 1.4 oz Taggiasca olives
- 0.35 oz capers in oil
- 1 tbsp lemon juice

Preparation of Octopus, Potato, and Panko Meatballs
Cook the octopus after cleaning it, placing it in a large pot filled with lightly salted water, along with a few bay leaves, parsley stems, and some black peppercorns.
Once it reaches a boil, lower the heat and let it simmer for 20 minutes, then turn off the heat, cover with the lid and let the octopus cool.
Cook the potatoes steam or boil them, then cut them into chunks along with the octopus.
Place both the octopus and potatoes in the bowl of a chopper or mixer along with the parsley and ground black pepper and blend.
You need to obtain a mixture that is soft yet compact.
With slightly oiled hands, form the meatballs. We made them large, but adjust according to your taste.
In a bowl or deep plate, beat the eggs and place the panko in a second bowl.
Pass the octopus, potato, and panko meatballs in the beaten eggs, then in the panko, pressing well to adhere.
As you prepare them, place them on a tray and let them rest in the fridge for 15/20 minutes.
In the meantime, prepare the mayonnaise enriched, then blend the olives with the capers and 1 tablespoon of lemon juice in a chopper’s cup.
Mix the mixture with the mayonnaise and place it in a small bowl to bring to the table.
Preheat the air fryer to 375°F, place the meatballs in the basket covered with parchment paper, and cook them for 15 minutes.
Remove the basket, turn them gently, and continue cooking for another 5 minutes.
Serve them accompanied by the enriched mayonnaise and enjoy your meal.
Variations and Tips for Octopus, Potato, and Panko Meatballs
If you prefer, you can fry the octopus meatballs in plenty of sunflower seed oil heated to 350°F until golden brown, turning them and finishing cooking by draining them on absorbent paper.
An alternative if you don’t have an air fryer is the traditional oven. Preheat it to 390°F in static mode, then place the meatballs on a baking sheet covered with parchment paper.
Spray the meatballs with a little oil, then bake them in the center rack for 25/30 minutes.
