The onion soup is typically French, where once the poor foods were brought to the table with whatever could be gathered at home, but today this delicious onion soup is also served in the most renowned restaurants where it is much appreciated.


The sweet taste of the onions pairs perfectly with the broth and the cheese that helps form a golden crust in the oven along with croutons of bread. You will see that it will be appreciated even by those who don’t like onions.


At my house, my husband didn’t want to know about it until one day I prepared it and presented it for dinner without telling him what it was, and he didn’t smell the onion scent but that of the cheese. At the first taste, he literally fell in love, realizing only later that it was the famous onion soup I had talked so much about.

Ingredients for the onion soup

  • 25 oz yellow onions
  • 4.2 cups beef broth
  • 3.5 tbsp butter
  • 0.25 cup all-purpose flour
  • 2 tbsp extra virgin olive oil
  • 1 tsp sugar
  • 2 pinches salt
  • 2 pinches black pepper
  • 3.5 oz emmentaler (or Gruyère or fontina)
  • 1 baguette

Preparation of onion soup

  • To prepare the onion soup, first prepare the homemade beef broth following my recipe.

  • Then peel and slice the onions.

    In a large pot with high edges, melt the butter along with the extra virgin olive oil.

  • As soon as the butter starts to foam, add the onions and cook for 8-10 minutes to soften them but without coloring over low heat.

  • Once the onions are soft, add the flour and sugar and mix well to incorporate them with the onions.

  • Add the boiling broth, cover with the lid, and cook over low heat for 30 minutes, stirring occasionally.

  • Meanwhile, slice the bread and heat a grill pan very well, toasting the slices.

  • Once the onion soup is ready, fill individual cocottes without reaching the brim.

  • Place 2 or 3 slices of toasted bread on top and cover with grated cheese.

  • Bake the onion soup in a very hot oven at 446°F (230°C) with the grill function and brown the surface for 5 or 6 minutes.
