Ingredients
- 4.4 lbs pork ribs
- 1 tsp salt
- 1 tbsp mustard
- 1 clove garlic
- 1 tsp sweet paprika
- 1 pinch black pepper (ground)
- 1 sprig rosemary
- 10.6 oz tomato puree
- Half white onion
- 1.4 oz brown sugar
- 1 tbsp smoked paprika
- 1 clove garlic
- 2 tbsps Worcestershire sauce
- 2 tbsps apple cider vinegar
- 2 pinches salt
- 2 tbsps extra virgin olive oil

Prepare the Meat
In a small bowl, mix the crushed garlic clove, mustard, salt, paprika, and black pepper.
Using a kitchen brush or your hands, spread the marinade all over the meat both on top and bottom.
Place the meat in a baking dish, cover with plastic wrap and let it rest in the refrigerator for at least 2 hours.
Finely chop the onion and garlic clove and sauté them in a small saucepan with the extra virgin olive oil.
As soon as the onion begins to turn golden, add the tomato puree, sugar, smoked paprika, and Worcestershire sauce.
Let it cook on low heat for 10 minutes until it thickens.
Add the apple cider vinegar and let it evaporate on the heat, taste for seasoning, and adjust with salt if needed.
Finish cooking for another 5 minutes, then strain through a fine mesh strainer. Set aside.
Remove the meat from the fridge, discard the plastic wrap and brush with a little BBQ sauce on both sides of the meat.

Cook the Oven-Glazed Ribs with BBQ Sauce in a preheated oven at 338°F (170°C) on the middle shelf for 35/40 minutes, remove the foil and parchment paper and brush again with BBQ sauce.
Add the rosemary sprigs and baste the meat with the cooking liquid that has formed.
Continue cooking for another 35/40 minutes, brush the meat again with the remaining BBQ sauce, increase the oven temperature to 392°F (200°C) and cook for another 20 minutes.
The Pork Ribs with BBQ Sauce are ready.
Tips and Variations
You can also cook the glazed pork ribs in an air fryer at 338°F (170°C) for 40 minutes, covering with aluminum foil and sealing well to prevent the foil from detaching from the tray.
Afterward, remove the foil and cook by brushing with BBQ sauce for 15 minutes.
If you prefer, you can use store-bought BBQ sauce.
You can cook the glazed ribs on a cast iron grill on the stove but I recommend dividing the ribs 2 by 2, covering with aluminum foil, and cooking for 20 minutes, then turning them and cooking for another 10/15 minutes.
