Ingredients for Overnight Chocolate Chia Pudding
- 1 1/2 cups soy milk
- 1/3 cup chia seeds
- 1/2 cup unsweetened cocoa powder
- 3 drops erythritol (or 1 teaspoon if powdered)
- 2 tbsp chocolate chips
- to taste shredded coconut

Preparation of Overnight Chocolate Chia Pudding
Preparing the Overnight Chocolate Chia Pudding is really simple.
Put the soy milk, chia seeds, cocoa, and sweetener in the glass of an immersion blender.
You can use liquid or powdered sweetener of your choice.
Blend until all ingredients are combined, it will take about 40 seconds, then pour into cups.
Finally, sprinkle the puddings with chocolate chips and finish with shredded coconut to your preference.
Place in the fridge to rest for at least 8 hours, we usually leave it for 12 hours or more.
The longer it rests, the thicker it becomes.
