Overnight porridge with oats and chia seeds

For breakfast or a snack the Overnight porridge with oats and chia seeds is perfect, fat-free (rather with good fats), sugar-free, rich in fiber and whole grains as well as seeds — the porridge can also help with weight loss and to keep hunger away.

The overnight porridge is called that because it requires no cooking and is left to rest in the refrigerator all night; the next day you’ll have a kind of dense, creamy pudding perfect for breakfast.

You can also prepare as many portions as you need for 3 or 4 days and cover them with plastic wrap: kept in the refrigerator they will stay perfectly. If when you try them for the first time you find them too firm, in the future you can increase the amount of liquid or yogurt to make them creamier, or reduce the oats — it’s up to you which fruit to use.

Ingredients for Overnight porridge with oats and chia seeds

  • 2/3 cup rolled oats
  • 2/3 cup soy milk (or oat milk)
  • 1 tsp chia seeds
  • 1 tbsp unsweetened cocoa powder
  • 1/4 cup Greek yogurt
  • to taste vanilla extract
  • 1/3 cup banana, sliced
  • 1/3 cup kiwi, chopped

Preparation Overnight porridge with oats and chia seeds

  • Preparing the Overnight porridge with oats and chia seeds is very simple. If you prepare 2 servings as we did, you should first divide the ingredients between the two jars.

  • Then, in a glass or a jar with a screw cap, add the rolled oats, the soy milk or oat milk and the chia seeds and stir.

  • Place the Greek yogurt and the cocoa on top, stirring just a little so you can see the two layers.

    Add vanilla extract or honey or maple syrup if you want a sweeter porridge.

  • Now cover the glasses with plastic wrap or close the jars with the lid and place them in the refrigerator for at least 4 hours if you want to enjoy them the same day, but ideally leave them overnight.

  • The next day take the porridge and finish it with banana slices or small pieces of kiwi.

    Or use any fresh or dried fruit you prefer.

  • You will see it become creamy almost like a pudding, but if the consistency seems too firm you can add 1 more tablespoon of soy milk.

How to store the porridge

You can keep it in the refrigerator in a tightly closed container for at least 4 days.
