- 1 1/4 cups all-purpose flour
- 1 cup cornstarch
- 1/3 cup sugar
- 1 tsp salt
- 3 egg yolks (hard-boiled)
- 2/3 cup butter
- 1 tsp lemon zest (grated)
- 1/3 cup jam (to taste)

How to prepare the ovis mollis cookies
Preparing the ovis mollis cookies is very easy and quick.
The uniqueness of this dough, called ovis mollis, lies in the fact that it is made with hard-boiled yolks.
So the first thing to do is to harden the eggs and remove the yolks, which will be passed through a sieve.
Combine the hard-boiled yolks in a bowl along with all the other ingredients with the cold butter from the fridge cut into pieces.
Work the dough very quickly with your hands or a wooden spoon until you have a crumbly texture, then turn it out onto the work surface and form a ball.
Cover with cling film and refrigerate to rest for at least 30 minutes.
Preheat the oven to 340°F.
Break off portions of dough, forming small balls slightly larger than a walnut.
Then place each ball well spaced on the baking sheet lined with parchment paper.
Press the center of each ball with the back of a wooden spoon to form the cavity that you will fill with the jam of your choice.
