Ingredients for Pan-fried Artichokes

  • 6 artichokes
  • 2 red Tropea onions
  • 2 tablespoons extra virgin olive oil
  • Half glass white wine
  • 1 lemon
  • 2 pinches salt
  • to taste chopped parsley

Steps

  • Clean the artichokes by removing the tougher outer leaves and part of the tough stem.

    Cut off the tips and split them in half.

  • Remove the inner choke and if they are large, split them again in half to have artichoke wedges.

  • As you clean them, place them in a bowl with cold water acidulated with the juice of 1 lemon.

  • Peel the onions and slice them not too thin.

  • In a wide, high-sided pan that can also contain the artichokes, brown the onion with a little extra virgin olive oil.

    It will take 3 or 4 minutes.

  • Remove the artichokes from the water, dry them quickly and add them to the pan with the onions.

  • Let them absorb flavors for a few minutes then deglaze with the white wine and let it evaporate over high heat.

  • Lower the heat, cover with a lid, and cook the artichokes in the pan for at least 15/20 minutes until they are tender.

  • Salt at the end of cooking and sprinkle with fresh chopped parsley.

  • Pan-fried artichokes are also perfect at room temperature to enrich a buffet, maybe with some toasted bread.
