The pan-fried gratinated artichokes are a delicious side dish enriched with breadcrumbs and Taggiasca olives, which you can turn into a main course by adding grated cheese or flakes to make these pan-fried gratinated artichokes richer.
Of course, if you prefer, you can bake them, but I find that cooking them in the pan is quicker and especially more economical, which is no small matter these days.
You can also make the pan-fried gratinated artichokes spicy if you like by adding 1 finely chopped fresh chili pepper along with the garlic cloves.

Ingredients for pan-fried gratinated artichokes
- 6 artichokes
- 3 tablespoons extra virgin olive oil
- 1 clove garlic
- 5 tablespoons breadcrumbs
- 2 pinches salt
- 1.75 oz Taggiasca olives
- 1 sprig parsley (fresh)
Preparation of pan-fried gratinated artichokes
To prepare pan-fried gratinated artichokes, first get a large bowl, fill it with water and lemon juice.
Clean the artichokes by removing 1 1/4 inches from the tips, the end of the stem, and the tough outer leaves.
Cut each artichoke into 4 parts and, if present, remove the internal fuzz, then place them in the acidulated water for 20 minutes.
In the meantime, in a small pan, toast the breadcrumbs without adding any fat until they become just golden, and set aside.
Chop the garlic clove and sauté it in a large pan with high sides with the EVO oil, then add the artichokes, salt, and let them flavor by turning them often for 5 or 6 minutes.
Add 2 tablespoons of water, cover with the lid, and cook the artichokes for 15 minutes, checking the cooking level with a fork.
Once they are tender, add the Taggiasca olives and stir.
Incorporate the reserved breadcrumbs and sauté everything well for a few minutes.
Chop the parsley with scissors and add it at the end of cooking off the heat.
You can serve the sautéed artichokes hot just after preparation but also at room temperature.
