Pasta alla Norcina Traditional Recipe

The Pasta alla Norcina traditional recipe is a typical pasta from Norcia, very tasty and easy to prepare. It is made with Norcia sausages, but if you can’t find them, simply use your favorite sausages, and you’ll fall in love with this recipe, which tradition enthusiasts often finish with a generous sprinkle of black truffle on top. Here, truffles are never available, so I didn’t include them, but I had it with truffles in Norcia, and it was amazing, so if you have the opportunity, add them too.

What is Needed to Prepare the Traditional Pasta alla Norcina Recipe

  • 11 oz pasta (short)
  • 10.5 oz sausage
  • 7 oz sheep ricotta
  • Half glass white wine
  • Half onion
  • 2 pinches salt
  • 2 pinches pepper
  • 2 tablespoons extra virgin olive oil
  • 2.1 oz Parmigiano Reggiano DOP
  • 1 clove garlic

How to Prepare the Traditional Pasta alla Norcina Recipe

  • Prepare the traditional Pasta alla Norcina recipe starting with the salted water for cooking the pasta.

  • Meanwhile, chop the onion together with the garlic clove and sauté them in the extra virgin olive oil in a large pan.

  • Crumble the sausage after removing the casing and add it to the onions, allowing it to brown well, deglaze with the wine allowing it to evaporate.

  • Cook the pasta al dente,

    Add the ricotta to the pan with the sauce and mix it with the rest of the ingredients.

  • Drain the pasta in the pan with the sauce, add 1 ladleful of cooking water, and toss the Pasta alla Norcina adjusting the salt and pepper.

  • At the end of cooking, if you want, add some grated black truffle on top just before serving.

How to Store the Traditional Pasta alla Norcina

The pasta should be eaten immediately after preparation, otherwise, like all pasta dishes, it becomes overcooked.
