Pasta with octopus in tomato sauce is a very flavorful first course loved by everyone. Octopus in particular is much appreciated on Italian family tables.
You can cook the octopus directly in the tomato sauce or you can cook it first and then cut it into pieces and finish cooking it in the tomato sauce.
Either way, it is an ideal dish for family Sundays; even the little ones at home really like it.

Ingredients

  • 14 oz Fusilli
  • 1.5 lbs Octopus
  • 1 cup Tomato purée (passata)
  • 1 clove Garlic
  • 1 tbsp Parsley
  • 3 tbsp Extra virgin olive oil
  • 2 pinches Salt and pepper

Preparation

  • To prepare pasta with octopus in tomato sauce you can first cook the octopus by immersing it in cold water and bringing it to a boil; once boiling, check and cook for at least 35 minutes.
    Drain it while it is still al dente, cut it into pieces and set aside.

  • Sauté the garlic cloves in the extra virgin olive oil for a few minutes, then add the tomato purée, a few tablespoons of water and a pinch of salt, and cook the sauce for 10 minutes.
    Add the octopus you set aside and continue cooking the sauce for at least 15 to 20 minutes, always checking the doneness of the octopus pieces.

  • Alternatively, you can prepare the tomato sauce by sautéing the garlic, adding the passata, seasoning with a pinch of salt, adding the cleaned and chopped octopus pieces and cooking while adding a few ladles of hot water to allow the octopus to cook in the sauce.
    Check doneness by piercing individual octopus pieces with a skewer. Remember that if you use one large octopus the cooking time will be longer than if you use several smaller baby octopuses.

  • Once the tomato sauce is ready, keep it warm and cook the pasta al dente in plenty of lightly salted water.

  • Drain the pasta into the pot with the octopus sauce, keeping a few tablespoons of the cooking water. Toss the pasta with the octopus sauce for a few minutes, adding one or two tablespoons of the reserved cooking water, and finish with a grind of freshly ground black pepper.

Notes

Pasta with octopus in tomato sauce should be eaten as soon as it is prepared. You can make the octopus in the sauce the day before so that when you sit at the table all you have to do is cook the pasta and sauté everything in the pan for a few minutes.
