Ingredients for pasta with pumpkin and bacon
- 11 oz pasta
- 14 oz pumpkin (already cleaned)
- 1 onion (small)
- 5 oz fresh bacon
- 1 tbsp extra virgin olive oil
- 2 pinches salt
- 2 pinches black pepper
Preparation of pasta with pumpkin and fresh bacon
Prepare the pasta with fresh pumpkin by placing a pot with lightly salted water on the stove to cook the pasta.
Meanwhile, cut the pumpkin into small cubes after cleaning it well.
Cut the fresh bacon into cubes and the onion into small pieces.
With a little extra virgin olive oil, sauté the onion for a few minutes without coloring it, then add the bacon.
Let it brown and lose its fat, then add the pumpkin cubes. Salt and pepper.
Add 1 ladle of pasta cooking water to ensure the pumpkin cooks well, and after 10 minutes mash some of it with the back of a wooden spoon.
Once the pumpkin is tender and the pasta is al dente, drain it directly into the pan with the sauce, adding another ladle of cooking water.
