Ingredients for pork loin slices with lemon

  • 1.3 lb pork loin
  • 3 lemons (organic)
  • as needed flour
  • 3 tbsp butter
  • 2 tbsp extra virgin olive oil
  • 2 pinches salt
  • as needed parsley (chopped)
  • 2 tbsp water
  • as needed black pepper (ground)

Preparation of pork loin slices with lemon

  • To prepare the pork loin slices with lemon, first trim any excess fat from the meat (I always leave a little). If the slices are too large, cut them in half.
    Squeeze the lemons and strain the juice.

    Put some flour on a plate to lightly flour the meat.

  • In a large, high-sided skillet heat the butter together with the 2 tablespoons of extra virgin olive oil. Both fats are used to prevent the oil from overheating and burning; together with the butter the temperature will be steadier and the meat much more flavorful.

  • While the butter melts, coat the pork slices in the flour and shake off the excess.


    Place them in the skillet over high heat and let them brown on one side, then after 4 minutes turn them over to the other side; at this point season with salt and pepper.

  • Lower the heat and add the reserved lemon juice to the pan. Dissolve one tablespoon of flour in two tablespoons of water and add it to the skillet.


    Stir to thicken the sauce that will form and finish cooking the pork loin slices for a total of 10 to 12 minutes, depending on their thickness.

  • When cooked, sprinkle the grated lemon zest and fresh parsley over the slices.

    A small tip: always taste the sauce before serving to adjust the salt to your preference.

    Serve the slices very hot, drizzling them with the pan juices to fully enjoy the creaminess.

Storage – Pork loin slices with lemon

You can store the pork loin slices with lemon in the refrigerator for one day, or freeze them, taking care to stop the cooking slightly earlier. This way, when you decide to eat them, you can reheat them in a pan with a tablespoon of water or broth without the risk of the meat becoming dry.
