- 2.2 lbs pork loin
- 4 heads onions
- 4 tbsps sugar
- 2 tbsps white wine vinegar
- 4 tbsps extra virgin olive oil
- 3 pinches salt
- 1 to taste black pepper
- 1 tsp marjoram
- 1 tsp oregano
- 1 tsp parsley
- 1 clove white garlic from Piacenza
- 1 tsp rosemary

Preparation
To prepare the pork loin with caramelized onions, first chop all the aromatic herbs together with the garlic clove.
In a small bowl, mix the herbs with a pinch of salt and pepper and 2 tablespoons of extra virgin olive oil.
Take the piece of meat and massage it with the herb preparation well on all sides to flavor it well.
Cover a baking tray with parchment paper and place the loin on top.
Bake in a preheated oven at 428°F for at least 40 minutes, turning the piece of meat halfway through cooking.
