Pork slices in milk are a really tasty main course ready in about 10 minutes, with few and simple ingredients to bring a dish full of flavor to the table. The meat becomes so tender it can be cut with a fork thanks to the cooking in milk and has a unique taste given by the aromatic herbs together with that pinch of chili pepper which, if you like it, can be added generously.

Ingredients
- 8 slices Pork loin
- 3 tbsp Extra virgin olive oil
- 1 cup Milk
- as needed Flour
- 2 tbsp Aromatic herbs (sage, parsley, rosemary)
- 1 Chili pepper
- 2 pinches Salt

Preparation
To prepare the pork slices in milk, first slice the pork loin into pieces just under 3/8 inch thick, then lightly flatten them with a meat mallet.
Quickly coat them in flour, shaking off any excess.
In a large pan heat the extra virgin olive oil and when hot, place the pork slices side by side without overlapping. Cook them for two minutes per side, turning with kitchen tongs, not a fork which would pierce the meat.
Once the pork slices in milk are browned on all sides, add the milk and the previously chopped fresh herbs, turn the meat to season it and continue cooking over low heat for another 8 minutes, turning a couple of times.
When cooked, season with salt and add the chili pepper cut into thin slices, turn the meat again and if the sauce is too liquid, raise the heat to high to let it reduce.
Then with the heat off, let the pork slices in milk rest for 5 minutes.

Tips
Pork slices in milk can be stored in the refrigerator for 2 days in an airtight container. Before eating, reheat in a pan over low heat, adding additional milk if the cooking juices have become too thick.
