Pork tenderloin in a skillet with potatoes is one of those go-to recipes that you can prepare quickly and that basically cooks itself without having to do a thousand things before sitting down to eat. It’s ideal when you have guests, maybe on a summer evening, and want to devote your attention to them rather than be tied up in the kitchen. The tenderloin cooks on its own, and I must say everyone likes it. Every time my daughters come over and I ask what they want to eat, they ask for this because they know it always turns out great and meanwhile we can chat without stopping, hahaha.

Ingredients

  • 1 lb 12 oz pork tenderloin
  • 6 potatoes
  • 1 onion
  • 2 pinches salt
  • 4 tbsp extra virgin olive oil
  • to taste rosemary
  • 1 small glass white wine
  • 1 pinch black pepper

Preparation: pork tenderloin in a skillet with potatoes

  • To prepare the pork tenderloin in a skillet, first trim any excess fat from the tenderloin, then season it with salt and pepper and massage the seasoning into the meat.
    Tie it with kitchen twine so it keeps a round shape during cooking and insert two sprigs of rosemary so they are in contact with the tenderloin.

  • Peel the potatoes and cut them into wedges not too small, then put them in a bowl with water so they lose some of their starch and become more golden when cooked.

  • Sauté the thinly sliced onion in the extra virgin olive oil in a large, high-sided skillet. Once the onion is browned, add the tenderloin and let it brown on all sides so it retains its juices; deglaze with the wine and let it evaporate.

  • Once the wine has evaporated, add the potatoes, lower the heat and cover the skillet with a lid.
    Cook the pork tenderloin in the skillet for a total of 20–25 minutes, checking that the cooking liquid doesn’t dry out too much.

  • During cooking, turn the pork tenderloin a couple of times and also the potatoes so they brown on all sides.
    If they tend to stick to the pan you can add a few tablespoons of water but don’t overdo it.

  • If you have a kitchen thermometer, measure the internal temperature of the tenderloin; it should reach 149°F to be perfectly cooked.
    If you don’t have one, pierce it with a skewer: the juices that come out should be clear. Turn off the heat, let it rest for at least 5 minutes before slicing, bring to the table and..
