The urge to use some minced meat that was in the fridge and the seasonal radicchio made this dish a pleasant discovery. Few and simple ingredients to bring all the flavor to the table in a single dish.

Ingredients for Potato Cake with Meat

  • 2.2 lbs potatoes
  • 2 eggs
  • 3 tbsp butter
  • 3 tbsp Parmigiano Reggiano DOP
  • 12 oz ground beef
  • 4 heads red radicchio from Treviso IGP, late variety (late variety)
  • 2 pinches salt
  • to taste breadcrumbs
  • 3 tbsp extra virgin olive oil

Preparation of Potato Cake with Meat and Radicchio

  • To prepare the potato cake with meat and radicchio, first cook the potatoes with skin in plenty of salted water for at least 25 minutes or in the microwave for 5 to 7 minutes. Check with a fork; if it easily pierces the potatoes, they are done.

  • Meanwhile, prepare the filling for the potato cake. Heat the olive oil in a large pan and brown the meat for a few minutes, stirring often with a wooden spoon. Finely chop the radicchio and add it to the preparation. Stir again and let everything cook for 10 minutes.

  • Once the potatoes are cooked, drain them and, while still hot, pass them through a potato masher, which holds the skin, so there’s no need to burn yourself peeling them first.

  • Collect the puree in a bowl, let it cool, season with salt and pepper, add the softened butter and grated cheese, and mix. Then add the eggs.

  • Preheat the oven to 428°F, butter, and sprinkle breadcrumbs on a baking dish. Mix very well, cover the bottom and sides of the dish with the potato mixture, fill the cavity with the ground meat and radicchio filling, and cover with the remaining potato mixture.

  • Level the surface well, sprinkle with breadcrumbs, and distribute a few knobs of butter on top. Bake for at least 20/25 minutes until a golden crust forms on the surface. Remove from oven, let rest for 5 minutes before serving, and…
