Ingredients for Potato Cigars Tasty Appetizer

  • 1.3 lbs potatoes
  • 1.25 cups all-purpose flour
  • 1 egg
  • 1.5 oz black olives (or Taggiasca or even pitted green olives)

  • Half teaspoon dried oregano

  • To prepare the Potato Cigars, first wash, peel, and cut the potatoes into pieces.

    Steam them with the metal basket placed inside a pot with 1 inch of water for 15 minutes (check the cooking level).

  • Alternatively, you can boil them with the skin or without as you prefer. Once cooked, if they have the skin, pass them through the potato masher.

  • Collect the puree in a large bowl and let it cool slightly.

  • When the potatoes are at room temperature, add the egg and flour to the bowl and mix well to combine.

    Finely chop the olives and incorporate them into the bowl with the potatoes.
