Potato Rolls with Bacon and Mushrooms

The potato, bacon, and mushroom rolls are a very tasty and nutritious side dish.

  • 5 1/4 oz smoked bacon
  • 2 cups mushrooms (champignon)
  • 2 pinches salt
  • 2 pinches pepper
  • 1 tbsp chopped parsley

How to Prepare Potato, Bacon, and Mushroom Rolls

  • Prepare the potato, bacon, and mushroom rolls starting with the potatoes, then wash and peel them, and cut them into not too large wedges.

  • Boil the potato wedges in lightly salted boiling water for 5 minutes, then drain and let them cool on a clean cloth.

  • Meanwhile, clean the mushrooms from their dirt and roots, slice them not too thin.

    Preheat the oven to 392°F.

  • When the potato wedges are warm, wrap them one by one with bacon slices and secure with toothpicks.

  • Place potatoes and mushrooms in an oven tray covered with parchment paper, season with salt and pepper, drizzle with a little oil, and bake.

  • Bake the potato and mushroom rolls for at least 20 minutes, checking the doneness by piercing the potato wedges with a fork.

How to Store Potato, Bacon, and Mushroom Rolls
