Ingredients for Potatoes and Mushrooms Side Dish

  • 1.3 lbs potatoes
  • 1.1 lbs champignon mushrooms
  • 1 tbsp lemon juice
  • 2 cloves garlic
  • 2 pinches salt
  • 1 tbsp chopped parsley
  • 2 tbsps extra virgin olive oil

Preparation of Potatoes and Mushrooms Side Dish

  • Prepare the potatoes and mushrooms starting with the potatoes, peel them, wash them, and cut them into chunks approximately 0.8 inches (2 cm) per side.

  • Place them in a bowl filled with cold water for 10 minutes, then remove and dry them.

  • Heat the extra virgin olive oil in a large pan along with the peeled and crushed garlic cloves.

  • When the garlic starts to sizzle, add the potatoes and let them brown on one side before flipping them with a slotted spatula.

  • After about 15 minutes, the potatoes will be browned on all sides. Pierce a few with a toothpick to check their doneness.

  • Meanwhile, clean the mushrooms, removing the dirt at the base and roots, remove impurities with a damp cloth without wetting them, otherwise, they absorb too much water.

  • Slice them thinly and drizzle them with lemon juice.

  • Incorporate them now with the potatoes, mix quickly to flavor them, and remove the garlic cloves.

  • Cook for 5 minutes after mixing once, then shake the pan to flip them upside down, and season with salt.

  • As soon as the mushrooms look moist between white and golden, do the toothpick test again on the potatoes. If the toothpick penetrates easily, turn off the heat.
