Ingredients for Puff Pastry and Salami Roses

  • 2 sheets puff pastry (rectangular)
  • 7 oz Milan salami (or Hungarian)
  • 2 oz cream cheese (like Philadelphia or Robiola)
  • 1 tsp pesto
  • to taste Taggiasca olives
  • to taste arugula (or salad for serving)

Tools

  • Cutters round with a diameter of 2.5 inches
  • 1 Baking Sheet standard oven
  • 1 Glass or small bowl

Steps

  • Unroll the puff pastry and cut out several discs with a diameter of 2.5 inches.

  • Dust the rim of a glass lightly with flour and position the discs of pastry slightly overlapping, with half inside the glass.

  • Place several slices of salami on top, with half inside the glass and the other half outside.

  • Make a second round of pastry, more salami on top of the second pastry, always folding half inside the glass.

  • Close the roses of puff pastry and salami with another disc, applying light pressure.

  • Turn each puff pastry and salami rose upside down onto the baking sheet covered with parchment paper, and gently remove the glass.

  • Bake the Puff Pastry and Salami Roses in the center rack of a preheated oven at 356°F in static mode for 15/18 minutes.

  • Meanwhile, work the cream cheese with some pesto, place in a pastry bag with a small tip, and set aside.

  • Remove the Puff Pastry and Salami Rose from the oven, decorate with dollops of cheese cream, and place a Taggiasca olive on top of each dollop.

  • On a serving plate sprinkled with arugula or salad as desired, place the Puff Pastry Roses and serve.

Tips and Variations for Puff Pastry and Salami Roses

If you prefer, you can place each puff pastry and salami rose inside muffin liners, even disposable ones, so they don’t spread during baking.

You can omit the pesto.

If you don’t have Taggiasca olives, you can use your preferred type.

Instead of cream cheese, you can use Stracchino slightly softened with 1 teaspoon of extra virgin olive oil.

The smaller the glass you use, the smaller the roses will be, and the less they will lose their shape.

You can make the puff pastry at home even the day before.
