Ingredients for the puff pastry calzone with ham and eggplant

  • 1 roll puff pastry
  • 1 black oval eggplant
  • 5.3 oz cooked ham (in one piece)
  • 4.2 oz fresh cheese (melty type like mozzarella or Asiago)

How to make the puff pastry calzone with ham and eggplant

  • Prepare the puff pastry calzone with ham and eggplant starting with the eggplants, wash it, trim it, and cut it into slices a little less than 1/2 inch thick.

  • Then cut each slice into sticks and then into small pieces.

    In a pan with a little extra virgin olive oil, cook the eggplant stirring often to avoid burning it, it should become soft.

  • It will take more or less 10 minutes, if you see it tends to burn you can add 1 tablespoon of water to avoid adding more oil.

  • In the meantime, preheat the oven to 392°F, cut the slice of ham into diamonds and then into small pieces and do the same with the cheese.

  • You can use both the mozzarella in a block for pizza or Asiago or Latteria or even Cacciotta.

  • Once the eggplant is cooked and warm, unroll the puff pastry leaving it with its parchment paper.

  • Mix ham and cheese with the eggplants, then cover half the pastry with the filling.

  • Close the ham and eggplant calzone into a half-moon shape and seal the edges with the help of a fork, make holes on the surface and bake.

  • Bake the calzone on the center rack of the oven for at least 20 minutes checking the browning level of the pastry.

The calzone can be stored in the refrigerator for 2 days in an airtight container, before eating pass it in the oven for 5 minutes.

You can enjoy the calzone also at room temperature.
