Puffed Rice and Chocolate Baskets

Have you ever had a sweet craving when you have little to work with and don’t want to turn on either the oven or the stove? These Puffed Rice and Chocolate Baskets are perfect for you (and us too).

They are simple and quick to make, and you can fill them like us with simple whipped cream and fresh blueberries, or use dried fruit or even canned fruit.

To fill them, you can use mascarpone cream, or coffee cream or if you have time, pastry cream will be perfect.

These Puffed Rice Baskets are the ideal snack and are also perfect prepared in advance and stored in the fridge or freezer to fill just before serving when unexpected guests arrive.

In short, a tasty treat to savor even after dinner with friends or family either in summer on the terrace or in winter perhaps while watching a movie on TV, they are made with dark chocolate and puffed rice and that’s it.

Ingredients for Puffed Rice and Chocolate Baskets

With these doses, you get 6 baskets using disposable aluminum molds; if you use metal muffin molds or individual portion ones, you will get more because they are smaller.

  • 1.76 oz puffed rice
  • 3.53 oz dark chocolate
  • 0.84 cup fresh liquid cream
  • 0.18 cup powdered sugar
  • to taste blueberries (or other fruit of choice)
  • to taste mint (fresh)

Tools

  • Muffin molds
  • 2 Bowls
  • 1 Electric whisk
  • 1 Piping bag

Preparation of Puffed Rice and Chocolate Baskets

  • To prepare the Puffed Rice Baskets, first, break the chocolate and melt it in a double boiler or microwave.

  • Mix the puffed rice with the melted chocolate in a bowl, making sure it is well incorporated.

  • Fill 6 muffin molds with 2 tablespoons of puffed rice and chocolate, and using a teaspoon, form a central hollow.

  • Place in the freezer to set for 2 hours.

  • While the baskets are setting, whip the cream well chilled from the fridge with the powdered sugar until a nice firm and compact consistency is achieved.

  • Wash and dry the blueberries or the fruit of your choice, if they are peaches or other large fruits, cut them into small pieces.

  • Remove from the freezer and gently unmold the Puffed Rice and Chocolate Baskets.

  • Fill them with the whipped cream using a pastry bag fitted with a star tip, and decorate with berries.

  • Finish by adding a few fresh mint leaves that give the dessert a very fresh aroma and serve.

How to Store Puffed Rice and Chocolate Baskets

You can store them filled for 2 days in the refrigerator.

Without filling, they can be stored in the refrigerator or freezer.
