Radicchio and Grana Pie Simple appetizer with radicchio

The radicchio and grana pie is a simple and delicious appetizer based on Treviso tardivo radicchio, but you can also make it with other less expensive and more readily available varieties of radicchio found at the market. The radicchio and grana pie is perfect to serve at a buffet, perhaps during the holidays like Christmas or New Year’s, where this radicchio shines.

To serve it, simply cook the radicchio with shallots in a pan, then mix it with the other ingredients, fill the aluminum or silicone muffin cups, bake, and voilà. If you want to further enrich the radicchio and grana pie, you can prepare a gorgonzola cream and sprinkle it over each pie before serving.

Does the tardivo radicchio usually taste bitter to you? No problem, before sautéing it, soak it in water and lemon juice, then drain and cook it.

Ingredients for radicchio and grana pie

  • 3 heads red radicchio from Treviso IGP, tardivo
  • 3.5 oz grated Grana Padano
  • 2 eggs
  • 2 shallots
  • as needed breadcrumbs
  • 2 tbsp chopped hazelnuts (or walnuts)
  • as needed salt
  • as needed extra virgin olive oil
  • as needed butter
  • as needed breadcrumbs

Preparation of radicchio and grana pie

  • 1- To prepare the radicchio and grana pie, start by cutting the root part off the radicchio heads, wash and dry them well, then cut them into pieces.

    Peel and finely slice the shallots.

  • 2- In a large pan, with a drizzle of extra virgin olive oil, cook the shallot and radicchio until they become tender but not mushy.

    Stir often to prevent too much coloring, season with salt and pepper at the end, and let cool.

  • 3- In the glass of your immersion blender or food processor, place the radicchio, eggs, breadcrumbs, and grana and blend until you almost have a cream.

    Add the chopped nuts or hazelnuts and stir with a wooden spoon.

  • 4- Preheat the oven to 340°F in static mode, butter your aluminum or silicone muffin molds and coat them with breadcrumbs.

    Using a spoon, fill with the radicchio mixture, press down to compact, sprinkle with breadcrumbs on top, and bake for 35 minutes.

  • 5- Remove from the oven and let cool slightly before placing on serving plates, cut some radicchio leaves into fairly small pieces, arrange them around the pies.
