They are eaten while still warm, sprinkled with granulated sugar or powdered sugar, and are especially a joy for children.
I still remember my grandmother making them, not only for carnival, surprising us with them for an afternoon snack after school, served on a tray with a lot of granulated sugar on top and a mug of milk next to it.

Ingredients for Raisin Fritters Carnival Recipe
- 2 1/2 cups all-purpose flour
- 2/3 cup milk
- 1/2 cup sugar
- 1 packet baking powder
- 3 eggs
- 1/2 cup raisins
- as needed grappa (to soak the raisins)
- as needed sugar (To sprinkle the fritters)
- 1 teaspoon lemon zest

Preparation of Raisin Fritters Carnival Recipe
To prepare the raisin fritters first soak the raisins in a small bowl with grappa.
Then, in a deep bowl, beat the eggs with sugar and lemon zest until you get a light and fluffy mixture.
Add the milk and mix.
Sift the flour with the baking powder and add it to the egg mixture using the hand whisk to incorporate and avoid lumps.
Now incorporate the drained and squeezed raisins, and mix. Cover everything with plastic wrap and let it rest until the oil is hot.
Meanwhile, heat plenty of oil for frying. If you have a thermometer, use it; the oil should not exceed 340°F, otherwise test it with a drop of batter. If it sizzles right away, the oil is ready.
Then take small portions with a spoon and let them slide into the hot oil with the help of the second spoon.
Turn them once they become golden on one side and let them brown evenly.
Drain them one by one with a slotted spoon onto paper towels, sprinkle with granulated sugar or powdered sugar.
