RECIPE PAN-COOKED LETTUCE WITH OLIVES AND PINE NUTS

Pan-cooked lettuce with olives and pine nuts is a brilliant idea. You know when the heads of lettuce in the fridge get limp and are no longer good to eat raw? What do you do? Throw them away? I would say no. I had never tried pan-cooked lettuce, but talking with my friend Libera from the blog La cucina di Liberte she recommended I try it. She has some versions on her blog, so I went to take a look and then we spoke again and she guided me through the preparation.


Complicated? Not at all. I’m usually clumsy with things I’ve never cooked before and always afraid of making mistakes, but she was very clear and helped me make a truly fabulous pan-cooked lettuce. If you’ve never tried it, I recommend it.
