Rice, potatoes, and beans, a humble farmer’s recipe but rich in flavor that is very easy to prepare if you use canned beans like we do. Don’t have canned beans but dried ones? No problem, you can use them as well; just remember to soak them the night before. This recipe is usually made with borlotti beans, but we used a can with a bean mix including borlotti, black beans, and cannellini, and I must say the result is amazing.

Ingredients for rice, potatoes, and beans
- 10.5 oz Carnaroli rice
- 4 potatoes
- 8.5 oz canned borlotti beans (or bean mix)
- Half onion
- 1 carrot
- 1 stalk celery
- 6 cherry tomatoes
- 1.75 oz Parmigiano Reggiano DOP
- 3 cups vegetable broth
- 2 pinches salt
- 2 tablespoons extra virgin olive oil
- 9 oz pumpkin
Preparation of rice, potatoes, and beans
Prepare rice, potatoes, and beans by finely chopping onion, carrot, and celery.
Sauté them in a pan with the extra virgin olive oil for 5 minutes.
Add the cherry tomatoes cut into 4 parts and let them cook with the sautéed vegetables for another 5 minutes.
Peel and cut the potatoes into chunks of 1 cm (0.4 inches) thickness and add them to the pot with the sauté.
After 15 minutes, add the beans drained from their preservation liquid, stir, and salt.
Continue cooking everything, covering just with broth for another 15 minutes before adding the rice.
If you want to use the pumpkin, cut it into pieces and add it along with the potatoes.
Then add the rice, cover again with broth and cook until the rice is al dente and the rest will be thick and creamy.

Yes, you need to be cautious about the cooking times of the vegetables, but generally, diced pumpkin, a sweet potato, or even 1 red bell pepper goes very well and cooks at the same time as the rice and potatoes.
