  • 2 tbsp extra virgin olive oil
  • 2 pinches salt
  • to taste black pepper (ground)
  • 1 pinch nutmeg
  • to taste breadcrumbs (for the surface)

Preparation of the Rice Roll Stuffed with Spinach

  • Cook the rice in plenty of salted water until almost fully cooked, leaving it al dente.

Drain it and let it cool slightly.

  • Wash the spinach well and drain them. If using frozen spinach, use them without thawing.

  • In a large pan, heat a tablespoon of olive oil and add the finely chopped garlic.

When the garlic becomes transparent, add the spinach and cook until well wilted, then season with salt and pepper to taste, adding a grating of nutmeg.

  • Let the spinach cool and then chop finely.

  • In a large bowl, mix the rice with the eggs, grated Parmesan cheese, and a pinch of salt and pepper.

  • Take a sheet of parchment paper and spread the rice mixture on it, forming a rectangle about 0.4 inches thick.

  • Spread the cooked ham over it to cover the entire surface, leaving the edges free.

  • Evenly distribute the chopped spinach over the ham, then place slices of cheese over the spinach.

  • You can use finely sliced mozzarella after drying it, dairy cheese, or Asiago sliced thinly.

  • With the help of the parchment paper, roll the mixture onto itself, forming a compact roll, and sprinkle it with breadcrumbs and a drizzle of olive oil.

  • Preheat the oven to 356°F in static mode.

  • Transfer the roll, along with the parchment paper, onto a baking sheet and bake in the oven for about 25-30 minutes, or until golden and crispy on the surface.
