Rigatoni with Pea Cream, including Frozen Ones

Easy, quick, and delicious, Rigatoni with Pea Cream can be made with fresh, frozen, or canned peas.

The sauce is prepared in the time it takes for the water to boil and the pasta to cook, so in less than 30 minutes, you have a perfect first dish to satisfy even the little ones at home.

The pea cream is perfect for any pasta shape. You can also enrich it by adding diced speck and your preferred grated cheese. Moreover, this pea cream does not contain garlic (you can add it if you like).

Ingredients for Rigatoni with Pea Cream

  • 11 oz rigatoni
  • 2 cups peas (fresh, frozen, or canned)
  • Half onion
  • 80 g grated parmesan
  • 3 tbsps extra virgin olive oil
  • 2 pinches salt
  • to taste black pepper
  • 10 leaves basil

Steps

  • First, place a pot full of slightly salted water on the stove to cook the pasta.

  • Meanwhile, finely chop the onion and sauté it in a pan with 2 tablespoons of extra virgin olive oil.

  • Once the onion becomes translucent, add the peas, stir to flavor, add a few tablespoons of pasta cooking water and let them cook.

  • Salt and pepper at the end of cooking.

    Place the peas in a chopper leaving aside 2 or 3 tablespoons for the final decoration.

  • Blend the peas with the grated cheese, basil leaves, and 2 or 3 tablespoons of extra virgin olive oil.

    If you prefer to use less oil, you can dilute the pea cream with more pasta cooking water.

  • Cook the rigatoni until al dente, drain them into the pan with the whole peas you saved, add the pea cream and toss, adding more pasta cooking water if needed.

  • To perfectly toss, I recommend tossing everything in the pan by moving back and forth and NOT mixing with spatulas or spoons.

  • If you decide to add speck or bacon, toast them in a pan without adding fats and then mix them with the whole peas set aside.

Tips and Variations

You can add a clove of garlic to the peas.

If you use canned peas, just heat them in a pan for 5 minutes.

You can replace parmesan with grana padano or pecorino.
