Ingredients for Roasted Drumsticks with Vegetables

  • 8 chicken drumsticks
  • 2 zucchinis
  • 2 carrots
  • 1 onion
  • 2 potatoes
  • 1/4 cup extra virgin olive oil
  • 2 pinches salt
  • to taste mixed herbs
  • 1 tsp smoked paprika

Preparation of Roasted Drumsticks with Vegetables

  • To prepare roasted drumsticks with vegetables, first clean the drumsticks of any feathers, then place them in a bowl.


    Prepare a emulsion with the extra virgin olive oil and spices, salt, and pepper, and drizzle over the drumsticks, massaging them well, then refrigerate them to rest for 30 minutes.

  • Meanwhile, peel the vegetables, wash, and slice zucchinis and carrots thinly, cut potatoes into small chunks, and the onion first in half and then into quarters.

  • Preheat the static oven to 428°F and in the meantime, arrange the chicken and vegetables in a baking dish.


    Season the vegetables with a little salt and pepper and a drizzle more of extra virgin olive oil.

  • Cook the drumsticks for at least 35 minutes, turning halfway through to flavor everything and also brown the vegetables.

  • When cooking is finished, turn off the oven.
    Let the roasted chicken drumsticks rest for 10 minutes before serving in the same baking dish where you cooked everything.
