Ingredients
- 2.2 lbs turkey thigh, raw
- 1 clove garlic
- 1 sprig rosemary
- Half teaspoon thyme
- to taste oregano
- 1.25 cups red wine
- 5 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar

- 1 red onion
- 6 leaves sage

Roasted Turkey Thigh in Pot
To prepare the turkey thigh in pot, first clean the thighs (we used 2 small ones), removing any feathers and visible cartilage.
In a bowl, mix the red wine, balsamic vinegar, and extra virgin olive oil, chop the herbs, and crush the garlic.
Massage the meat with the herbs and place it in the bowl, turning it a couple of times as you massage it.
Cover the bowl with plastic wrap and place in the refrigerator to marinate for at least 3 hours, or longer if you have more time.
Then drain the meat and pat it dry, strain the marinade, and set it aside.
Clean and finely chop the onion.
Melt the butter in the pot with the oil, add the sage leaves and onions, and let them flavor.
Add the turkey to the pot and brown it for 5 minutes on each side.
Remember to turn it with tongs or two wooden spoons, never pierce the meat with a fork.
Pour the reserved marinade over the meat until it is covered.
Add salt, cover with the lid, and lower the flame to the minimum to cook.
Cook the roasted turkey in pot for 1.5 hours, checking occasionally and turning the meat.
In the last 30 minutes, if there is still a lot of cooking liquid, remove the lid and increase the flame to thicken and reduce it.
Serve the roasted turkey thigh in pot drizzled with its cooking sauce.

If you don’t want to use the marinade to cook the meat, you can cover it with vegetable broth.
You can change the herbs according to your taste.
