Thanks to its shape and bright green color this romanesco immediately wins everyone over. Preparation of Romanesco broccoli gratin

  • To prepare the Romanesco broccoli gratin, first wash and dry the romanesco, separate the florets and steam them for 5 or 6 minutes — no more, otherwise they will become mushy.

  • Preheat the oven to 428°F, cut the melting cheese (both caciotta and whichever you prefer) into small pieces. Chop the garlic and mix it with the breadcrumbs; if you like, you can also add some chopped fresh parsley.

  • Grease a baking dish with the extra virgin olive oil and arrange the romanesco florets close together, cover with the chopped cheese.

  • Sprinkle with the Pecorino and the breadcrumbs and bake for 15 to 20 minutes until the cheese has melted and a golden crust has formed on top…
    ENJOY!

  • The romanesco broccoli gratin is excellent both hot, just out of the oven, and at room temperature — try it!!
