Ingredients for Russian salad with homemade mayonnaise
- 2 Potatoes
- 2 Carrots
- 3.5 oz Fresh peas
- 1 tbsp Extra virgin olive oil
- to taste Salt
- 1 bunch Parsley
- 1 egg
- 0.85 cup Sunflower oil
- 1 tsp Mustard
- 1 tbsp White wine vinegar
- 1 tsp Salt

Preparation of Russian salad with homemade mayonnaise
To prepare the homemade Russian salad, first wash potatoes and carrots and peel them.
Dry them well with a kitchen towel and cut them into 0.4-inch cubes, making sure all the pieces are more or less the same size.
Shell the fresh peas (you can also use frozen ones) and cook them in a small pot with very little water until they become tender, drain them, and let them cool.
Potatoes and carrots should be steamed with the appropriate basket for 10 minutes.
Or microwave them in a microwave-safe container with a tablespoon of water, covered with plastic wrap at maximum power for 5 minutes.
Let them cool and check the cooking, if they are still too hard cook for a few more minutes but do not overdo it, the vegetables should be cooked but still intact.
Now prepare the homemade mayonnaise.
In the cup of your immersion blender, put all the ingredients, insert the blender in contact with the base of the cup and turn it on, do not move it.
You will see that after a few seconds the mayonnaise starts to form, at this point, you can move the blender up and down without stopping.
When you have achieved the desired consistency of the mayonnaise, stop blending, place the homemade mayonnaise in the refrigerator for at least 20 minutes.
Now mix the vegetables in a salad bowl.
Season them with a pinch of salt, a little extra virgin olive oil, and chopped parsley leaves, mix well to flavor.
Now add the mayonnaise, mix well, cover everything with plastic wrap and refrigerate until serving time.
