Ingredients for the Rustic Pie with Green Beans

  • 14 oz shortcrust pastry
  • 18 oz green beans (fresh or frozen)
  • 2 oz grated Parmesan cheese (or pecorino)
  • 3 eggs (medium)
  • 5 oz mozzarella for pizza
  • 1 tbsp chopped parsley
  • 2 pinches salt
  • to taste black pepper
  • 1 pinch nutmeg

Preparation of Rustic Pie with Green Beans

  • To prepare the Rustic Pie with Green Beans first make the shortcrust pastry, of course, you can use the pre-made ones or even puff pastry or savory tart crust.

  • In the meantime, clean the green beans by trimming the ends, wash them, and place them in the steamer basket inside a pot with 1 inch of water.

  • Cook the green beans for 4 or 5 minutes, then remove them from the basket and let them dry on paper towels.

  • Preheat the oven to 375°F in static mode, roll out the dough on 2 sheets of parchment paper to a thickness of 1/8 inch.

  • Line a 9.5-inch tart pan with the dough, removing the edges that extend beyond the pan.

  • Beat the eggs with salt, pepper, nutmeg, and chopped parsley, then add the grated cheese.

  • Cut the now cold and dry green beans in half and add them to the bowl with the eggs.

  • Pour the mixture into the pan, cover the surface with slices of mozzarella for pizza.

    If you have other cheese like smoked cheese, you can use it freely or make a mix of both.

  • Bake the Rustic Pie with Green Beans in the center rack of the oven and cook for at least 35 minutes.

    If you see it starting to burn on the surface in the last 10 minutes, you can cover it with a sheet of parchment paper.

  • Remove from oven, let it rest for 5 minutes before taking it out of the pan, and serve.
